The launch of The Refinery's Cocktail Kitchen Series this past Thursday night was a booming success!
Guests from a variety of different backgrounds joined together to experience the first night of this innovative cocktail and food pairing competition.

First Course:
Qualicum scallop ceviche, chile, cilantro and citrus, braised fennel, guajillo dressing (inspired by the WEST COAST)
Pairing: Aguas Fresca
1.50 oz Hornitos tequila
0.50 oz homemade sherry fennel bitters
1.50 oz watermelon water
0.75 oz lime juice
1.00 oz cane sugar
mint and cucumber foam

Second Course:
Caribbean jerk spice poached prawns, tomato chayote and pineapple salad, pimento dressing (all spice, cinnamon, nutmeg, habanero hot sauce) , avocado crema and homemade soft tortilla (inspired by the CARIBBEAN and the Gulf Central American Countries)
Pairing: Tamarind Bushy Tree
1.50 oz Hornitos tequila
0.50 oz homemade house bitters
0.75 oz lemon juice
1.00 oz tamarind allspice syrup
0.25 oz cilantro water
chili powder & dehydrated mango salt

Third Course:
Achiote & Driftwood Whitebark beer marinated flank steak, jicama, watercress and cucumber salad, jalapeno and cilantro dressing, grilled onions (inspired by the YUCATAN region of Mexico)
Pairing: Horchata Picante
1.00 oz Hornitos Tequila
0.25 oz homemade ancho & chipotle bitters
0.50 oz homemade chocolate vermouth
4.00 oz almond and rice milk horchata

Lauren Mote has been an intricate part of the food and beverage industry for over 10 years. Spanning her knowledge and enthusiasm between Toronto and Vancouver, she has devoted her expertise to Le Select Bistro, Lumiere, Goldfish Pacific Kitchen, Hawksworth Catering and Chow Restaurant.
