Bio:
From Byron Bay, Australia, Jacob Sweetapple knew that this was the career for
him at a young age, café summer jobs through his high school years only confirmed
that hospitality was in his blood. A move to Sydney in 2000 Jacob studied at the
internationally accredited cocktail school Alex Beaumont, while learning the craft beside
some of the city’s best barman. A move to New Zealand in 2003 landed Jacob a position
at the much respected SPYBAR in Auckland. Throughout his time there, he represented
the bar in numerous competitions, worked with international vodka company ABSOLUT
and was published in NZ Hospitality Magazine. Jacob has spent the last 10 years working
& training alongside some of Australia & New Zealand’s most respected in the industry.
Now based in Vancouver, Jacob designs the cocktail program for the Fairmont Pacific
Rim Hotel and is the ABSOLUT Brand Ambassador for western Canada, he has appeared
on Shaw TV crafting custom cocktails, Published drink recipes in Chef Quarterly and
was the creator of the signature cocktail for ABSOLUT’s limited edition Vancouver
bottle that raised funds for local Vancouver Artists. The future will see Jacob hopefully
opening the doors to his own place but one thing is for sure, Vancouver’s bar community
is now his home.
